So, What is Kombucha?

Kombucha is made from raw fermented tea. It’s made by brewing and steeping the best quality loose leaf green and black tea, then adding cane sugar and kombucha culture (which is a mixture of yeast and bacteria). During the fermentation process the kombucha culture gets busy, fermenting the brew by consuming the cane sugar into acids and transforming the tea into the effervescent and zingy beverage we know and love as kombucha.

Is all Kombucha equal?

The answer is a big fat NO! Making Kombucha properly in a traditional way, as we do here at Hip Pop, isn’t easy, it takes time and a lot of patience. We’re a family business and we don’t cut corners. Hip Pop is an authentically fermented kombucha, brimming with flavour, acids, antioxidants and beneficial enzymes.

When you buy a kombucha check that it’s been made with quality sugar and is free from sweeteners such as erythritol and stevia. Always read the label – if an ingredient sounds weird then it probably is, even if it’s described as natural. Our team feel very strongly that sweeteners have no place in a proper kombucha. Zero sugar sounds great but in actual fact sugar is a crucial part of fermentation and that’s what feeds the friendly yeast and bacteria and gets the whole beautiful and natural process motoring. Our kombucha is full of flavour and zing yet naturally below the sugar tax limit without any added nasties.
